The Pastor's Kitchen: Potato Salad Recipe

𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬 :


6 large cooked potatoes, cut into quarters

2 tablespoons of wholegrain mustard 

Half a cup mayonnaise

Half a cup crispy bacon, diced (optional) 

2 tablespoons of honey

1/2 red onion, diced.

Fresh parsley, finely chopped

1/4 green peas 

Half red onion

1 teaspoon of rajah curry powder

Quarter onion, diced 

1 tablespoon of oil

1 leaf of spinach, finely chopped 

Salt


𝐌𝐞𝐭𝐑𝐨𝐝 :


In a medium heat saute onion for about 2 minutes and add curry powder and salt, cook for 1 minute and put it aside to cool.


Add mayonnaise, wholegrain mustard, honey and white pepper together until smooth. 


Place the potatoes, red pepper, spinash red onion, bacon, Parsley and peas in a large bowl. 


Gently mix in the dressing until it coats the potatoes well.
