The Pastor's Kitchen: Chip Chicken Bake

A scrumptious guilty pleasure. Tastes even better the next day 😉


What you will need:


1.5kg chicken portions

3x Large packets of your choice of potato chips (crushed)

1x Small packet frozen mixed veggies

1x Onion (diced)

Grated cheese for the top layer


Chicken spice, worcester sauce and pepper to taste


Bring the chicken portions to a boil and add in chicken spice, pepper, worcestor sauce and the diced onion. Once done, de-bone the chicken pieces. 


Using the water the chicken cooked in, add in the frozen veggies and add the de-boned chicken pieces. Simmer until the frozen veggies are done. 


In a casserole dish, start with a layer of the crushed potato chips. Sprinkle with some chicken spice. 


Add a layer of the chicken and veggie mixture and add another layer of crushed chips, repeat until you end up with a layer of the crushed chips and top with the grated cheese.


Bake at 160 degrees until the cheese is melted.


Important to note: Don't add in any extra salt. The saltiness from the potato chips should be sufficient. 


Also, make sure the chicken mixture has enough liquid in.
